2020 census: Nearly 1 in 4 Utahns is a minority, and these areas are growing fast. In the decade prior, minorities fueled about 40% of change, said Perlich, director of demographic research at the University of Utah’s Kem C. Gardner Policy Institute. That was up from 35% during the 1990’s.
