What is the difference between Texas and Memphis style bbq? Carolina and Kansas are very distinct with their sauce – but Memphis and Texas have a tendency to use dry rub rather than sauce. The only things I can think of are: 1. Texas style is centered more around beef whereas Memphis is centered more around pork.
