Even Hindi’s sister languages Marathi, Gujarati, Punjabi, Bengali etc are not completely mutually intelligible with Hindi. You can think of the differences between them as being similar to the differences between French, Italian, Spanish, Portuguese etc.

Can Gujarati speakers understand Hindi?

Because of Hindi being prominent language in every sphere of North India, normally a Gujarati will understand Hindi and even speak it as it is studied albeit as 2nd or 3rd language.
